Mark Davis is our lead wine trainer at No. 10 Restaurant + Bar, and we got the chance to speak to Mark to get an insight into his world.
What past experiences have led you to where you are today?
I have worked with some amazing people over the last 25 years. Some of those people continue to inspire me still today.
How did you find your passion for wine? Is there a particular experience or event that sparked your passion?
Hyatt Hotel Canberra’s Fine Dining restaurant from the 90’s, ‘The Oak Room’ is where my passion for wine started. I was able to work with an amazing team alongside the wine reps who used to call on us. I still catch up with many of them over a glass of wine to chat about the industry, as quite a few of us are still in it!
Why do you think it’s important that people are taught about wine?
The most important that I’ve learnt would have to be that you never stop learning about wine… varieties, regions, countries and most importantly the amazing people you meet along the way!
What is your favourite part about your job?
Of course, the wine… as well as meeting new people who not only inspire me but also have amazing life stories. The industry has taken me to some of the most amazing parts of Australia, and I am so grateful to be a part of it.
What is the best piece of advice you’ve ever received?
Simple yet provoking, “Work hard and be nice to people” has always resonated very strongly with me.
